Avocado toast has taken the world by storm. This phenomenon is not only delicious but has plenty of nutritional value. Bill Granger, the accredited chef of the dish, started serving this dish in 1993, however, it has only recentlygained recognition for its health benefits, flexible incorporation into meals and its delicious flavour. The dish has an estimated 240 calories per serving and has many health benefits such as antioxidants, the lowering ofcholesterol levels by 14 points, being a good source of vitamin C as well as being a source of potassium. There are other benefits to this dish, including but not limited to,feeling fuller for longer (and not to mention the fact that it is very instagrammable!).

 

 

Here are three affordable, flavourful and fun variations to the avocado toast:

The Quickie!

Ingredients:

  • 1 avocado peeled and seeded
  • 2 tablespoons chopped coriander
  • juice of 1/2 lime
  • salt & pepper to taste
  • 2 slices whole grain bread or bread of choice
  • 2 eggs fried (scrambled, or poached, optional)

Instructions

  1. Toast 2 slices of whole grain bread in a toaster until golden and crispy.
  2. In a small bowl combine and mash the avocado, coriander, lime, and salt + pepper to taste. Then spread half of the mixture on each slice of toasted bread. Top with fried, scrambled, or poached egg if desired.
  3. Serve immediately.

 

Meatless Mondays!

Ingredients:

  • 1/2 avocado
  • Thick cut bread
  • freshly squeezed lemon juice
  • salt and pepper
  • 1/4 cup halved cherry tomatoes
  • Feta cheese

Instructions:

  1. Toast the piece of bread until the bread is just golden brown.
  2. For the halved avocado, remove the pit from the avocado and discard. Then remove the avocado from it’sskin and place the avocado into a medium bowl and mash it with a fork and a pinchof freshlemon juice. Season with salt and pepper as needed.
  3. Toss together the tomatoes and feta cheese in a dish.
  4. Spread the mashed avocado on top of the toast, followed by the tomato and feta mixture.
  5. Serve immediately.

The Breakfast Toast

Ingredients:

  • 1 piece thick cut bread
  • 1/2 avocado
  • freshly squeezed lemon juice
  • salt and pepper
  • 1 egg, scrambled
  • 1 piece bacon, cooked

Instructions:

  1. Toast the piece of bread until the bread is just a golden brown.
  2. For the halved avocado, remove the pit from the avocado and discard. Then remove the avocado from the skin and place the avocado into a medium bowl and mash it with a fork beforeadding asqueeze of freshlemon juice. Season with salt and pepper as needed.
  3. Spread the mashed avocado on top of the toast, followed by the scrambled egg and cooked bacon.
  4. Serve immediately.
